Arroz con Leche
Arroz con Leche! This dessert is very common to spanish speaking countries. Although it was not invented by them they have created many variations of this sweet dessert. It was brought to Spain by the Muslims when they took control of the Iberian Peninsula. The Latin American rice pudding is made with rice, condensed milk and cinnamon. The Puerto Rican rice pudding is made with rice, coconut milk, sugar and cinnamon. The Brazilian rice pudding is made with rice, milk, sugar and cinnamon. The recipe for traditional arroz con leche is as follows.

Traditional Arroz Con Leche:
  • Rice (1/2 cup)
  • Milk (4 cups)
  • Sugar (1/2 cup)
  • A pinch of Salt
  • 1 Lemon (or orange) zest
  • 1 stick Cinnamon
1. Cook the rice with little water (don't put to little so that it dries)
2. While cooking the rice heat the milk with the lemon or orange zest, the sugar, salt and the cinnamon.
3. Before the milk starts to boil add the rice and set the heat on low.
4. Stir it from time to time to make sure it doesn't burn.
5. Let it cook for about 20 minutes or until cooked.
6. Add milk if it gets too dry.
7. Remove the cinnamon stick and zest, then serve.
8. Serve cold and store in the fridge.
